Oven Baked Fish and Chips

Oven baked fish and chips...beforePreheat oven to 400F

Line a large cookie sheet with parchment.

Prepare a pie-plate or similar for the “first dip”: beat 1 large egg and some milk (around 1/4 cup or 60 ml for 2 fillets) together.

On a plate or other flat surface, combine 2 cups /500 ml breadcrumbs, unseasoned, or 1 cup /250 ml whole wheat flour and 1 cup / 250 ml cornmeal with 2 tsp. / 10 ml dried dill and 1 tsp. / 5 ml lemon pepper or citrus pepper seasoning.

Dip fish in milk and egg mixture, then in crumb mixture to coat. Place on cookie sheet. Spray with cooking spray (I have a pump sprayer filled with olive oil instead).

Cut 2 large, washed potatoes into 1/2 inch / 1 cm “fries”. Toss with 2 tbsp. / 30 ml olive oil. Sprinkle with dill and lemon pepper. Add to cookie sheet. Baked fish and chips...after!

Bake for about 20 minutes, then turn fries over with a spatula. Bake an additional 10 or 15 minutes until golden.
